She wants to take a chance that she will not need health insurance but I'm afraid that if she needs medical help it will be finically hard on both of us.

Definitely a bad idea. One can't be 100% sure about the future requirements & that's why needs the insurance to cover the future uncertainties. So, stop your wife from making this wrong decision.
