I have bought a home out of state and will be moving within the next 30 or so days. My current home will be for sale. What is the least expensive way to keep insurance coverage on the structure of my current home?

If there are no personal belongings, obtain a Fire (dwelling) Policy.

You can search for a vacant home insurance policy, covering named perils.
