I had a leak behind a wall in the bathroom which has come through the ceiling in my kitchen. How can the insurer say they exclude slow leaks when I didn't know I had one until the ceiling collapsed?

I'd think the resulting damage (ceiling) would be covered but not the pipe itself. Losses need to be sudden and accidental. The damage to the pipe would be wear and tear and not sudden. The water damage to the ceiling would be sudden... at least initially. I've not handled many property claims but I've always paid for damage resulting from a leaking pipe. Are you sure there is not this misunderstanding about part of the claim being covered and part of it not?
