my son who is insured on my s10 truck sometimes drives my old jeep. The jeep is not insured but all drivers are on other vehicles. I this ok?

Nope. Your policy is not going to provide coverage for a vehicle you own but do not insure. It will also exclude coverage to your son as that vehicle is available for his regular use.

In other words... you can pay for coverage on one vehicle and expect to be covered on any other vehicles you may own. Your liability coverage won't go up much if you have more vehicles then drivers.

Your policy covers vehicles and regular driver listed on it, it usually covers non-regular licensed drivers such as your Aunt visited from out of town, it may cover other insured vehicles that you do not own and do not regularly drive such as a rental. But it will not cover another vehicle you own that is not covered by another policy.
I would be seeking additional coverage to cover the vehicle if it is only occasionally used it might qualify for a seasonal coverage as I have used in the past for seasonal vehicles such as a motorcycle. I have heard of people who add one or two rarely used vehicles on a day by day basis for rare use such as parade or display use on collector vehicles but might be inconvenient to for a recreational type vehicle which might not invoke advance warning of the occasional uses.
