What are the conquences of not cashing a check from the claims adjustor, other than being out that amount of money?

They will hunt you down and force you to cash the check.
Really nothing. Most carriers will make many attempts to let you know that the payment has not been cashed. I don't know for sure after that but I think they are required to report it as "lost money" to the state.
