A couple days ago I lightly rear-ended a car. I know it was lightly because we were both originally stopped at a red stoplight, and in the tired state I was that day, I relaxed and depressed the brakes slightly and my car slowly roll forward due to the hill we were on. I happened to have been staring at my odometer the whole time and it was reading 0mph the whole way, and thus the surprise when i felt the bump of the two cars.
Anyways, when we went to inspect our cars for damages, my car (a Toyota RAV4) had no damages at all while their car (a Mercedes-Benz ML350) had 2 deep, dirty scratches on their car's rear bumper. I am very shocked at those damages for a slight bump, but the owners insisted that I was responsible for those damages, which they claim with a quote from their dealership that it costs $2000 to fix.
I personally think that those damages were prior to/not related the accident, and I also know that since I rear-ended them, however slight, I would be considered at fault with my insurance claim. My questions is, in the case where I file a claim with my insurance, would my insurance send out a claims adjuster to inspect their car and determine whether or not their damages were caused by me/this accident?

Your insurance company should send out an adjuster to take a look at the other party’s car and asses the extent and the nature of the damage that has been caused. Just make sure that you have a talk with your insurance company and clearly state the situation and circumstances of the accident.

Sounds like some sort of harrassment, or did you mean they were going to assess the damage? That darn spell checker!
