My dad's Honda accord was stolen from the parking lot while we were out shopping. Lodged a police complain and all. Informed my insurer as well. This was around 2 months back , and the car hasn't been recovered yet. The insurer still wants us to wait and haven't provided for rental also. What can we do to speed up the process since we need the money to buy a new vehicle for ourselves?

As far as I am concerned, then is there any sort of gap insurance in your insurance policy ? If you would be having a gap insurance then to some extent the expenses of buying a new car gets somewhat low. However it may happen that the insurance company might be waiting for the police report and that is why it would be getting late.
