Can I replace my garage with a larger more expensive one using a insurance claim (RCV) and my own money (for the difference). Will the insurance company have a problem with that and will I get the recoverable depreciation check to add in once garage is complete?

No they won't have a problem and yes you will get the additional payment once the work has been completed.
