Wait a minute and slow down some...
When was your insurance due? When did you pay it? And to whom? and how? I know two hours BEFORE the accident....but exactly (such as- it was due the 1st of january and i paid it the 14th, at 4pm i gave the agents secretary cash, the wreck was at 5pm)....
Why are they refusing to pay? More than likely the time on the accident is AFTER you paid your premium...or your policy had lapsed and they are refusing to reinstate it? You need to give us much more detail...also EXACTLY what are the facts of the loss, or accident? Did the police respond, did your wife or the other party immediately get on their cell phones to report the wreck of call someone? (this is REALLY important)...
re: how do you sue them? frankly you may not have a case at all...and we'd be happy to give you some advise, but (again) we need more info...
If you are dead set on suing them you (obviously) need to hire an attorney to do so...
Provide additional info and let's look at this better....

How do you sue them... you file complaint papers with the court alleging bad faith.
Seems like there is probably more to the story then just, I paid the bill and they denied the claim.
Has the insurance company sent you a written denial? The claim is not denied until they send this. When you make your payment you get some type of receipt. Have you provided them with confirmation that the bill was paid prior to the accident? Here is the important part... was _enough_ paid to keep the policy in-force?

Hi yeah!
The most important thing to know is whether your policy was active while at the time of payment. If it was...then next best thing for you to do is to go through your policy papers thoroughly!
